Ingredients

Malts & Adjuncts

  • 3.0kg Gladfield American Ale Malt
  • 2.0kg Pilsner Malt
  • 500g Flaked Wheat
  • 200g Sour Grapes

Hops

  • 100g Southern Cross Hops
  • 150g Wai-iti Hops
  • 100g Motueka Hops

Yeast

  • 2 x SafAle US-05 Yeast

Water Additions (Not Included)

  • 3.1g Calcium Sulphate
  • 2.3g Calcium Chloride
  • 2.3g Magnesium Sulphate

Other

  • 1 tsp Irish Moss

Expected Brew Figures (Based on 80% Mash Efficiency)

  • OG: 1.055
  • FG: 1.010
  • IBU: Approx. 45
  • ABV: 5.9%
  • Volume: 23L

Method

  1. Mash grains with 21L of water at 65°C for 90 minutes, adding the water additions at the start of the mash.
  2. Mash out at 76°C for 10 minutes.
  3. Sparge with 12L of water at 76°C.
  4. Boil for 90 minutes.

Boil Additions

  • 60 minutes remaining: Add 5g Southern Cross hops.
  • 10 minutes remaining: Add 1 tsp Irish Moss.
  1. At flameout (0 minutes), turn off the heat.
  2. Cool the wort to below 90°C and add:
    • 100g Wai-iti hops
    • 50g Motueka hops
    • 45g Southern Cross hops
  3. Whirlpool for 20 minutes (stir rapidly or recirculate the wort to create a whirlpool).
  4. Cool the wort and transfer to a sanitised fermenter.
  5. When the wort reaches 18–23°C, pitch 2 packets of SafAle US-05 Yeast.
  6. Ferment for 4–5 days.
  7. Add the remaining hops for dry hopping:
    • 50g Motueka hops
    • 50g Southern Cross hops
  8. Leave dry hops in contact with the beer for 5 days.
  9. Remove hops and cold crash for 7 days at 1°C.
    • If cold crashing is not possible, allow the beer to age for an additional 7 days.
  10. Keg or bottle as usual and enjoy

To ensure successful delivery make sure there is some one Present at the Delivery Address during business hours.

Delivery times are normally 1-2 days to the North Island and 2-5 days to the South island once dispatched. Rural delivery can take an extra day longer.
