Ingredients

Malts

  • 4.5kg Golden Promise Malt
  • 500g Melanoiden Malt
  • 500g Vienna Malt
  • 500g Caramalt

Hops

  • 150g NZ Riwaka Hops

Other

  • 1 tsp Irish Moss

Yeast

  • 2 x Packets West Coast Ale Yeast

Expected Brew Figures

  • OG: 1.060
  • FG: 1.015
  • IBU: Approx. 60
  • ABV: 6%
  • Volume: 23L

Method

  1. Mash grains at 65°C for 60 minutes using 16.5L of water.
  2. Mash out at 75°C for 10 minutes.
  3. Sparge with 17L of water at 75°C.
  4. Boil for 90 minutes.

Hop Additions

  • 60 minutes remaining: Add 15g Riwaka hops.
  • 10 minutes remaining: Add 30g Riwaka hops and 1 tsp Irish Moss.
  • Flameout (0 minutes): Add 30g Riwaka hops.
  1. Cool the wort rapidly and transfer to a sanitised fermenter.
  2. When the wort reaches 20–23°C, pitch 2 packets of West Coast Ale Yeast.
  3. Ferment at 20°C for 7 days.
  4. After 7 days, add 75g Riwaka hops to the fermenter for dry hopping (use a weighted hop bag if preferred).
  5. Leave dry hops in contact with the beer for 5–7 days.
  6. Transfer to a secondary fermenter, add your preferred finings agent, and cold condition in a fridge or cool location for 5 days.
  7. Keg or bottle as usual and enjoy.

To ensure successful delivery make sure there is some one Present at the Delivery Address during business hours.

Delivery times are normally 1-2 days to the North Island and 2-5 days to the South island once dispatched. Rural delivery can take an extra day longer.
