Pure Distilling Red Gum Port Barrel Chunks are a limited-release batch sourced from rare and specialty barrels, bringing rich colour and layered character to your spirit. Seasoned in Australian Port, the red gum timber adds dried fruit, raisin and plum notes, balanced with subtle caramel sweetness, gentle spice and a soft earthy warmth.
Each batch is limited and can vary slightly in character (which is kind of the point). Once this lot is gone, the next one won't necessarily be the same.

How To Use
Use 500g of barrel chunks with 2.5L of spirit in a clean glass jar or stainless-steel vessel.
At 40% ABV: Soak for 7–8 days, taste regularly & extend if desired.
At 60% ABV: Soak for 4–5 days, taste regularly & extend if desired.
The packaging also gives 4–6 weeks as a general guide, so taste regularly rather than treating the timing as a hard rule. Red gum brings a character all of its own, so this isn't one to rush. Taste as it develops and stop the soak when the dried fruit, sweetness and earthy notes are sitting where you want them. Strain and remove the chunks once you're happy with the flavour.
Brew Tip
Don't use a demijohn - the chunks expand during the soak process, so they can get stuck in the neck of the demijohn! We recommend using a 4-litre glass jar with a wide mouth.
Perfect for aging mash & grain-based whiskies made using the Pot Condenser, or neutral spirit made from the Reflux Condenser.

If your item is Oversized or More Than 25kg you may be contacted for an additional freight charge to be calculated upon picking of order.

To ensure successful delivery make sure there is some one Present at the Delivery Address during business hours.
Delivery times are normally 1-2 days to the North Island and 2-5 days to the South island once dispatched. Rural delivery can take an extra day longer.
