This all-grain recipe kit gives homebrewers the ingredients they need to craft a classic Czech-style Pilsner from scratch at home. Light straw to golden in colour with a clean, crisp malt character, it showcases Czech Saaz hops for their distinctive spicy bitterness and delicate floral aroma.

Clean, crisp and crystal clear. Saaz knows how to make an entrance without making a scene.

Why Brewers Love It

  • A Proper All-Grain Brew: A satisfying recipe for brewers who enjoy getting stuck into the full mash-to-glass experience.
  • Classic Czech Pilsner Character: Pale, clear and crisp with a clean malt profile and distinctive hop character.
  • Saaz in the Spotlight: Czech Saaz hops bring their signature spicy bitterness and subtle floral aroma to the brew.
  • Clean Malt Backbone: Pilsner malt keeps things light and clean, allowing the classic hop character to shine through.
  • Step Mash Method: Multiple mash temperature rests gives a more hands-on approach to crafting this classic style.
  • Warm or Cold Fermentation: Depending on yeast availability, the recipe can be fermented traditionally with M76 Bavarian Lager Yeast or warmer with M54 Californian Lager Yeast.
  • Optional Lagering: Cold conditioning gives the finished brew extra time to develop its clean, crisp and polished character.

Ingredients

  • 4.4kg Pilsner Malt
  • 200g Acidulated Malt
  • 60g Czech Saaz Hops
  • 2 x Mangrove Jack's M76 Bavarian Lager Yeast (Cold Fermentation) or 2 x Mangrove Jack's M54 Californian Lager Yeast (Warm Fermentation)

Yeast selection is subject to availability.

  1. Add malts to 17L water at 50°C & mash well. Rest for 30 minutes.
  2. Raise mash temperature to 62°C & rest for 20 minutes.
  3. Raise mash temperature to 72°C & rest for further 20 minutes.
  4. Raise mash temperature to 78°C & hold for 5 minutes to mash out.
  5. Sparge with 13L of water using a single continuous sparge.
  6. Boil for 75 minutes.
  7. Add 35g of Czech Saaz hops with 60 minutes left in the boil.
  8. Add remaining 25g of Czech Saaz hops with 15 minutes left in the boil.
  9. At the end of the boil, cool the wort and transfer to a clean, sanitised fermenter.
  10. For M76 Bavarian Lager Yeast: Pitch both packets and ferment at 10–15°C for approximately 7–10 days, or until the specific gravity has remained stable.
  11. For M54 Californian Lager Yeast: Pitch both packets and ferment at 18–22°C for approximately 5–8 days, or until the specific gravity has remained stable.
  12. Bottle or keg as usual.
  13. Optional: If kegging, reduce the temperature to approximately 1°C and lager for 2–3 weeks to help the flavours meld and develop a clean, polished finish.
