Made from genuine Sherry barrels that have held premium aged Tasmanian whisky, they’re a simple way to add another layer of barrel-aged character to spirits at home.

How To Use
Use 500g of barrel chunks per 1L of 38% ABV spirit in a clean glass jar or stainless-steel vessel.
Pre-soaking the chunks can help speed up the seasoning process. Add the chunks to your spirit, cover and let them get to work.
Fast soak: Leave for 3–6 days to start infusing oaky characteristics and burnishing new spirit.
Longer ageing: Leave for a few weeks for older, more flavoursome results.
Taste regularly throughout the process and extend the soak if you want a deeper oak and barrel character. Once you’re happy with the flavour, drain and filter before bottling. Do not reuse the chunks.
Brew Tip
Don't use a demijohn - the chunks expand during the soak process, so they can get stuck in the neck of the demijohn! We recommend using a 4-litre glass jar with a wide mouth.
Oak extraction can vary depending on the spirit and soak time, so taste as you go. A shorter soak gives you more control over the oak and Sherry character, while a longer ageing period builds a deeper, more developed result.
For a smoother, more rounded flavour, use the chunks alongside other elements such as oak essences.

If goods are Not Received within 7 days of purchase, contact us.
Any Damaged or Missing Items from your order must be brought to our attention within 7 days of receiving your order.
If your item is Oversized or More Than 25kg you may be contacted for an additional freight charge to be calculated upon picking of order.
We use Courier Post as our freight provider. Prices and providers are subject to change without prior notice.
To ensure successful delivery make sure there is some one Present at the Delivery Address during business hours.
Delivery times are normally 1-2 days to the North Island and 2-5 days to the South island once dispatched. Rural delivery can take an extra day longer.
