This all-grain recipe kit gives homebrewers the ingredients they need to craft a rich, full-bodied Scotch Ale from scratch at home. Also known as a "Wee Heavy", this strong ale delivers deep malty character with caramel sweetness, subtle roasted notes and just a touch of smoke, balanced by a low, tea-like hop bitterness.

Big, bold and malty. This is not a beer that believes in doing things by halves.

Why Brewers Love It

  • A Proper All-Grain Brew: A satisfying recipe for brewers who enjoy getting stuck into the full mash-to-glass experience.
  • Big Malty Character: A generous malt bill creates the rich, full-bodied backbone this classic style is known for.
  • Caramelised Goodness: A long boil helps develop deeper colour and those signature rich, caramel-like flavours.
  • A Hint of Smoke: Smoked malt adds another layer of complexity without stealing the show.
  • Beautifully Balanced: East Kent Golding hops bring a gentle bitterness that balances the malt while letting those rich, sweet flavours stay centre stage.
  • A Classic Wee Heavy: Deep copper-to-brown in colour, warming and full of character – just the ticket when you're after a brew with a bit of heft.

Ingredients

  • 6.8kg Pale Ale Malt
  • 900g Carapils Malt
  • 200g Roasted Barley Malt
  • 100g Smoked Malt
  • 50g UK East Kent Golding Hops
  • 2 x Mangrove Jack's M36 Liberty Bell Ale Yeast

Method

  1. Add malts to 18L of water at 68°C & mash in thoroughly.
  2. Rest the mash for 90 minutes.
  3. Recirculate the wort until it runs clear.
  4. Raise the mash temperature to 77°C and hold for 10 minutes.
  5. Sparge with 15L of water at 80°C.
  6. Boil for 90 minutes.
  7. Add half the EKG hops with 60 minutes left in the boil.
  8. Add the remaining EKG hops with 45 minutes left in the boil.
  9. At the end of the boil, whirlpool for 30 minutes.
  10. Cool wort and transfer to a clean, sanitised fermenter, then pitch both packets of Mangrove Jack's M36 Liberty Bell Ale Yeast.
  11. Ferment at 16–22°C for approximately 7–10 days, or until the specific gravity has remained stable for two consecutive days.
  12. Bottle or keg as usual.

Rich, warming and proudly on the hefty side. Wee by name, definitely not by nature.
